Why the roast date matters more than the sell-by date

What actually changes in a coffee bean over the weeks after roasting.

Freshness is the variable most people never control. Coffee starts losing aromatic compounds within days of roasting, which is why a bag with a printed roast date tells you more than any tasting note on the front.

Brew with filtered water just off the boil, weigh your dose, and keep your grinder consistent. Those three habits will improve your cup more than any equipment upgrade.
