Start with these ratios, then adjust by taste. Every recipe assumes filtered water and a fresh roast date.

Espresso

  1. 1Weigh 18 g into a clean basket and distribute evenly.
  2. 2Tamp level with firm, consistent pressure.
  3. 3Pull to 36 g in the cup and taste.
  4. 4Grind finer if it runs fast, coarser if it chokes.

Latte

Double shot + 180 ml milk

  1. 1Pull a double shot into your cup.
  2. 2Steam milk to about 60 °C with a fine microfoam.
  3. 3Pour from height first, then close in to finish.
  4. 4Midnight Dark holds up best against oat milk.

Drip

4–5 minutes
  1. 1Rinse the filter and add ground coffee.
  2. 2Use filtered water just off the boil.
  3. 3Let the machine run a full cycle without stirring.
  4. 4Serve immediately rather than holding on the plate.

French press

  1. 1Add coffee, pour half the water and stir the crust.
  2. 2Top up with the remaining water and fit the lid.
  3. 3Press slowly at four minutes.
  4. 4Decant straight away to avoid over-extraction.

Cold brew

  1. 1Combine coffee and cold filtered water.
  2. 2Refrigerate for 16 hours.
  3. 3Strain through a paper filter.
  4. 4Dilute to taste and serve over ice.
